Ingredients

  • 1 lb. ground beef
  • 1 box stuffing mix
  • 1 can condensed cream of mushroom soup
  • 1 cup chicken stock
  • 1 cup frozen mixed vegetables

Instructions

  1. Brown the Beef: Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart as it browns. Drain any excess grease.
  2. Prepare the Slow Cooker: Lightly spray the inside of a 6-quart slow cooker with cooking spray. Add the cooked ground beef and spread it evenly across the bottom.
  3. Layer the Ingredients: Sprinkle the dry stuffing mix over the beef, then add the frozen mixed vegetables.
  4. Make the Sauce: In a bowl, whisk together the condensed cream of mushroom soup and chicken stock until smooth. Pour the mixture evenly over the ingredients in the slow cooker.
  5. Cook: Cover and cook on LOW for 3–4 hours, or until the stuffing is tender, the vegetables are heated through, and the casserole is hot throughout.
  6. Rest and Serve: Gently stir the casserole before serving. Leave it uncovered for about 5 minutes to allow the stuffing to absorb any remaining moisture and help the casserole set.

For a lighter variation, substitute ground turkey for the beef. You can also switch the stuffing mix to a cornbread-style or chicken-flavored variety for a different flavor.
