Peach Cobbler Cheesecake Cupcakes

Cobbler Crust

  • 1½ cups graham cracker crumbs (or vanilla wafers)
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ½ cup unsalted butter, melted

Cheesecake Filling

  • 16 oz (2 blocks) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour

Peach Cobbler Topping

  • 2 cups peaches (fresh or canned, diced & drained)
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

Optional Streusel Topping

  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ tsp cinnamon
  • 2 tbsp cold butter, cubed

Instructions

1. Prep the Pan

  • Preheat oven to 325°F (165°C)
  • Line a muffin pan with cupcake liners

2. Make the Crust

  1. Mix graham crumbs, brown sugar, cinnamon, and melted butter.
  2. Press 1½ tablespoons into each liner.
  3. Bake for 5 minutes, then cool slightly.

3. Cook the Peach Cobbler Filling

  1. In a saucepan over medium heat, combine peaches, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and water.
  2. Cook 5–7 minutes until thick and syrupy.
  3. Remove from heat and cool.

4. Make Cheesecake Batter

  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time.
  3. Mix in sour cream, vanilla, and flour.
  4. Beat just until creamy—don’t overmix.

5. Assemble

  1. Spoon cheesecake batter over crusts (about ¾ full).
  2. Add 1 tablespoon peach filling on top.
  3. Swirl gently with a toothpick.

6. Streusel (Optional)

  • Mix flour, brown sugar, cinnamon, and butter until crumbly.
  • Sprinkle lightly over cupcakes.

7. Bake

  • Bake 25–30 minutes, until centers are just set.
  • Turn oven off, crack the door, and let sit 10 minutes.
  • Remove and cool completely.
  • Chill at least 2 hours before serving.

Serving Tips

  • Serve chilled or slightly warm
  • Optional drizzle: caramel sauce or vanilla glaze
  • Garnish with whipped cream or extra peaches
