Amish Chicken Corn Noodle – Easy Slow Cooker Comfort Meal

If you’re looking for a warm and comforting meal that requires almost no effort, Amish Chicken Corn Noodle is the perfect slow cooker recipe. This traditional dish combines tender shredded chicken, creamy corn, and soft egg noodles to create a rich and satisfying dinner.

Inspired by classic Amish home cooking, this recipe uses simple pantry ingredients and slow cooking to develop deep, comforting flavors. It’s a hearty family meal that practically cooks itself while you go about your day.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 2 cans (14.75 oz each) cream-style corn
  • 2 cups chicken broth
  • 8 oz wide egg noodles (about half a standard bag)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)

How to Make Amish Chicken Corn Noodle

1. Prepare the Chicken

Place the raw chicken breasts in the bottom of a 5–6 quart slow cooker, arranging them in a single layer if possible.

2. Add the Corn

Pour both cans of cream-style corn over the chicken. Spread it evenly so the chicken is mostly covered.

3. Add Broth and Seasoning

Pour the chicken broth over the mixture and sprinkle with salt and black pepper.

4. Cook the Chicken

Cover the slow cooker and cook on LOW for 4–5 hours or HIGH for 2½–3 hours, until the chicken is tender and easy to shred.

5. Shred the Chicken

Use two forks to shred the chicken directly in the slow cooker. Stir it into the creamy corn mixture.

6. Add the Noodles

Add the dry egg noodles and stir them into the hot chicken and corn mixture so they are mostly submerged.

7. Cook the Noodles

Cover and cook on HIGH for 20–30 minutes, stirring once halfway through, until the noodles are tender and have absorbed some of the broth.

If the mixture becomes too thick, add a splash of hot water or extra broth. If it seems too thin, turn off the slow cooker and let it sit covered for 5–10 minutes to thicken.

8. Serve

Taste and adjust seasoning if needed. Serve warm in bowls while the noodles are tender and the sauce is creamy.

Tips for the Best Amish Chicken Corn Noodle

  • Use chicken thighs instead of breasts for extra tenderness and flavor.
  • Stir the noodles halfway through cooking to prevent sticking.
  • Add frozen peas, carrots, or extra corn for more color and nutrition.
  • For firmer noodles, cook them separately and mix them in before serving.
