Instructions
1. Preheat & Prep
Preheat your oven to 425ยฐF (220ยฐC).
Line a baking sheet with parchment paper or lightly grease it. Set aside.
2. Make the Biscuit Dough
In a large bowl, whisk together:
- Flour
- Baking powder
- Sugar
- Garlic powder
- Onion powder
- Salt
- Cayenne pepper (if using)
Add the cold cubed butter and cut it into the dry ingredients using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese.
Pour in the cold buttermilk and gently mix just until a soft dough forms. Do not overmix.
3. Prepare the Crab Filling
In a separate bowl, combine:
- Cream cheese
- Parmesan cheese
- Mayonnaise
- Chives or parsley
- Old Bay seasoning
- Lemon zest
- Worcestershire sauce
- Minced garlic
Mix until smooth.
Gently fold in the crab meat, being careful not to break it up too much.
Season lightly with salt and pepper to taste.
4. Assemble the Biscuits
Scoop about 2 tablespoons of biscuit dough and flatten slightly in your palm.
Add 1 tablespoon of the crab filling to the center.
Top with another small piece of dough and gently seal the edges, forming a round biscuit.
Place seam-side down on the prepared baking sheet.
Repeat with remaining dough, spacing biscuits about 2 inches apart.
5. Bake
Bake for 14โ18 minutes, or until the biscuits are puffed and golden brown on top.
6. Make the Lemon Garlic Butter Glaze
While the biscuits bake, whisk together:
- Melted butter
- Lemon juice
- Lemon zest
- Garlic powder
- Chopped parsley
- Pinch of salt
7. Finish & Serve
As soon as the biscuits come out of the oven, brush generously with the lemon garlic butter glaze.
Let cool for 5 minutes, then serve warm.
Helpful Tips
- Keep all dairy cold for the flakiest biscuits
- Drain crab meat very well to avoid soggy centers
- Best served fresh, but can be reheated in the oven at 350ยฐF
